

Tried cookie icing for the first time. Can anyone explain why adding matcha to my cookie icing made it dry all splotchy? Photo from right after icing and then next day for comparison. Thanks!

What order did you add ingredients to the mixer? I have never thought to use matcha before!
I personally have decided to not add anything extra to my RI. The only 2 times my icing did not dry as expected was, 1-added emulsion vs extract (didn’t dry) 2 I added cocoa powder to brown for color & taste (looked perfect when piped but kept running off the side of cookie), now I see people say black cocoa powder should be used. The RI is a science like all baking & in this case I’m not pushing the envelope, don’t have time to redo orders. I do all my flavors in the cookies with reductions I make. Like your idea, did the Matcha taste good?
Matcha is finely ground leaves. It will absorb water and expand just like larger tea leaves.
