

So my in household, we have been making an effort to cut down on food waste. We have a rule that all produce has to be 90% eaten before we make another grocery store run. All that was left this round were a few onions that didn’t make it into a stew, a bunch of celery, and a half block of cheese. So I present to you my creation called “Everything but the Garden” Salad! Basically a play on cucumber+onion salad. We will be paring this with the “everything but the kitchen sink” soup that’s currently in the instant pot.
I chopped 1 red and 1 white onion. A few stalks of celery, and added sharp cheddar. For the base mix I did 3/4c Rice vinegar and 1/4c white wine vinegar. I slowly simmered that and dissolved sugar in the vinegar. Poured that over the onions and let sit for several hours to cool. Once 100% cooled I added the cheese cubes and 1/4c heavy cream to give it a creamier base. Mix, mix, mix and in the fridge overnight. It’s been hard to keep the fork out of it this morning. I love the celery!! Love the crunch it adds and how it holds the vinegar flavor.

Looks wild, sounds yum though! Kudos for not being wasteful. No starving African child guilt for you!
There’s those “chopped sandwiches” where you just chop everything together and throw it on bread.
Reminds me of that. I do it all the time with a ton of onions / salami / cheese.
