Sceblasti are traditional flatbreads from the Salento region in Puglia, Italy, made with a rustic dough of flour, water, and olive oil, enriched with ingredients like olives, onions, tomatoes, and herbs. Its name comes from the Griko dialect, meaning “kneaded by hand”.

  3. I am an American who has lived in many big cities with large Italian American populations, yet all you ever see at Italian festivals are pizza and pasta. I have never seen sceblasti. This is why traveling to different regions (if you can) is so important. There are specialties you will never see anywhere except in their place of origin. This is but one example.
