I love pasta e fagioli!! My world imploded when I tried my friend’s version years ago. He’s from Tuscany and he also added carrots like you, potatoes and rosemary as well as a very powerful soffritto of onion and garlic, and a chunk of parmigiano rind. Top up with some juicy Evoo and it’s now how I make it too.

*Pasta e fagioli* is maybe my favorite soup in the whole world. Top five for sure.
Every time I’m in Italy I eat it wherever I go. I’ve tried dozens of different variations and the *only* commonality I found was that it will have pasta, and fagioli.
For all the people saying this isn’t *pasta e fagioli*: maybe you’re Italian and you should have more experience than me, but are you sure it just isn’t *pasta e fagioli* from *your part of Italy*?

That looks great. I’m from Hawai’i, and it reminds me of Hawaiian Portuguese bean soup, minus the sausage and potatoes. I’ve made pasta e fagioli but never with kidney beans. I use white bean if I can’t find borlotti.
