  1. I’m curious what the purpose is to remove them prior to cooking? Seems like both the roast and ribs would turn out better cooked separate, but presumably it’s done for good reason.

    Personally, I like them sous vide for a much longer time to render that glorious fat, or overcook to render the fat. Lord knows I love a good medium rare. But that fat is so gross to me.
