
As the title says I made my first bulk loaves! 9 in total 8 Jalapeño Chedder and 1 regular! My husband absolutely loves my Jalapeño Chedder loaf and wanted to share some with his coworkers! I used my holy grail recipe!
100g starter
350g room temp water
500g King Arthur Bread flour
10g kosher salt
Mix all ingredients until all combined. Let rest 1hr start stretching and fold with 30mins in between each one. (If I'm adding inclusions i will add those on the 2nd and 3rd stretch and fold to incorporate better) after 4th stretch amd fold let bulk ferment for 3-4 hrs or until doubled in size. Let retard overnight in the fridge. The next morning pre heat oven with dutch oven inside at 450º score loaf (I like to add 2 ice cubes on the outside of the parchment paper it helps my loaves crust turn oht softer) bake with lid at 450º for 30min remove lid and bake at 450º for an additional 15min. Let cool for at least 2hr to continue cooking!

How are you doing this? rotating one out of the oven during the “lid off” phase? Did you actually bulk all the dough or mix individual batches.
I am on my 4th day of baking, 7th and 8th loaves coming out tonight for my coworkers. Ive done 4 different inclusions. Honestly kind of over baking sourdough right now
What do you mean ice cubes on outside of parchment paper? Sorry I’m just not visualizing it in my head
