  1. 📌 Creamy Saffron Risotto (Alla Milanese)
    Ingredients:
    • 1 cup Arborio rice
    • 1 small onion (finely chopped)
    • 1 celery stalk (finely chopped)
    • 2 cloves garlic (minced)
    • 2 tbsp butter + 1 tbsp olive oil
    • 3–4 cups warm stock
    • Pinch of saffron (soaked in warm stock)
    • Splash of white wine
    • Salt to taste
    • Parmesan cheese
    • Few drops lemon juice
    Garnish:
    • Mushrooms sautéed in butter
    Method:
    1)Sauté onion, celery & garlic in butter + oil
    2)Add rice, toast 1–2 min
    3)Deglaze with white wine
    4)Add warm stock gradually, stirring
    5)Add saffron water, cook till creamy
    6)Finish with butter, parmesan & lemon juice
    7)Top with sautéed mushrooms 🍄 Parmesan. Cheese
