


For context: many years ago, my partner boldly attempted to make macarons despite having never even baked before. They had no idea macarons were notoriously finicky to make, and this is how they turned out. He doesn’t remember what he did but reported that they were delicious. I can diagnose the lumpy, unsifted flour, but the way they exploded?? What on earth could he have done to them?

I have literally never seen this before. I have no clue what could cause it. They’re under macronaged. I would also guess that maybe they were on a tilt in the oven?
Was baking powder added to the mix?!?
I can see a lot of things going on here. Under-mixing, not sifting, possibly a meringue not properly mixed to stiff peaks, incorrect piping, wrong oven temp/time, over or under resting. It could be any or all of those things.
Also, my suggestion when learning to make macarons? Don’t do anything extra like food colouring, trying to pipe fun shapes, sprinkles, etc. Master the technique, then expand on that. Food colours, especially the wrong kind, can affect the outcome so you want to eliminate that as a possibility in the beginning.

With macs there are 1,000 little things you can do to improve your chances of success. Looks like he did none of them 😂

Often I see very flat macarons. Rarely do I see anything like this. My guess is that everything was close, but not quite right.
Literally NO ONE has an answer for this.
Out of curiosity what recipe and technique did he use? Did he weigh his ingredients? This looks to me like a recipe issue coupled with meringue and macronage issues. I’m impressed how wrong they look.
My legit answer is it looks under “macronaged”. As in they made the merengue and didn’t get enough of the air out so when it baked the cookies basically blew up because of the excess air.
My brain is trying to process this. Where have I seen this before? Oh yah, that sealant stuff that expands around windows. I have no idea what happened. 😆
