there’s Spaccio Salumeria on Washington in West Adams, i think they butcher their own meat, so would presumably have these parts.

Just wanted to add that Korean tripe is delicious. Usually served with liver and Korean blood sausage. Check out places like 8th St Soondae (Soondae is blood sausage). They serve it as is, in a soup, or with a noodle stir fry. Absolutely delicious.

I make my own lampredotto sandwiches when the craving hits. The hardest part is finding the right stomach tripe, abomasum.

Haven’t found trippa alla Fiorentina on any menus here in SoCal yet.
I do order tripe at dim sum but it’s a completely different dish. Same with MX preparations of tripe. Love menudo and tacos de tripa but nothing like the Italian styles.
