Air brined uncovered in fridge for 6 hours with 1tsp of kosher salt and 1 tsp per lb of baking powder.

  2. invection ovens can’t fry. you’re cooking wings in a toaster oven and pretending it tastes good because you didn’t have to clean up a fryer.
