Pappardelle is bronze die extruded on my Phillips pasta maker. The rest of the recipe was my own creation (though hardly original). Overall, I'm pretty proud of how it came out.

Automod has encouraged me to include a recipe. I didn’t really measure anything but here are the broad strokes: browned the sausage, add half a white onion chopped, deglazed with chicken stock, added about 3 tbsp butter, thyme, about 5 small cloves of garlic, sliced sundried tomatoes, tomato paste. Deglazed with more broth. By now, sausage is cooked through, remove them, add milk (didn’t have heavy cream), mix 2 tbsp AP flour in some water and add that to thicken. Cooked pasta about 1 min less than al dente, added maybe 1/3 cup pasta water to sauce, then added pasta to sauce and finished cooking it there. Add spinach and simmer until wilted (I wish I had done this before adding the pasta). Sliced sausage, and serve, garnished with a little more sun dried tomatoes and Romano cheese. Heavy cream and cheese in the sauce would have been better, but I was trying to cut some calories out of it where possible. Probably a losing battle, but overall the flavors were there.
