
I know what you’re thinking. Pizza lovers are protesting in the streets, cabbage lovers are pointing furiously to their woks, and corn lovers are just keeping their distance, but there’s something to the combination.
In the impoverished days of his early twenties, my husband would use whatever he had to cook for himself and with some pita bread, Alfredo sauce, shredded cabbage, canned corn, and mozzarella, he created this pizza.
Today, I recreated the recipe with a thin crust and homemade white sauce, took a hesitant bite, and stared at him. Darn it if he didn’t stumble upon something oddly good here.

Sauce Recipe:
2 tosp butter 2 cloves garlic minced 2 tosp flour 1 1/4c milk Salt and pepper to taste 1/4 c Parmesan 1 tosp fresh herbs (parsley, thyme, oregano and/or rosemary) optional
Sauce Instructions: In a small saucepan add butter and garlic over med low heat. Once butter has melted, cook garlic 30 seconds and add flour. Whisk until you make a thickish white roux, about 1-2 mins. Slowly add milk while stirring until incorporated. Add salt and pepper to taste. Add any chopped herbs you please and the parm. Stir occasionally until consistency is thick but spreadable. Set aside.
Building the pizza: On store bought or homemade pizza dough, spread desired amount of sauce evenly. Add a good layer of shredded cabbage first with a sprinkle of salt, then mozzarella, and then top with fresh or canned corn kernels. For a homemade dough, Bake at 500 degrees Fahrenheit for 10-12 minutes until crust is golden brown. Remove, cut, and enjoy.
Notes: You could precook the cabbage to remove the excess of water content from it, otherwise you will have a juicy pizza.
