This is a 2 inch thick prime-grade NY strip that I reverse seared on a grill. No sous vide. The benefit of reverse sear is that you get smoke flavor from coals and wood chunks when you cook indirect. After cooking indirect, I seared on a hot griddle to get some malliard browning on the outside.

Seasoning was 2 parts coarse ground black pepper and 1 part kosher salt.

Am I biased? Hell yeah, I'm hey_grill, not hey_sous_vide! But IMO sous vide is over rated for steak. If you know how to grill, you can make next-level steaks.

  7. OK guys. I cook professionally. Sometimes, on an open flame grill, you don’t get a perfect sear. Our steaks, as they should be, are kept between 34-38° Fahrenheit. This steak man made looks delicious and I’d eat the hell out of it. Some of us work and don’t have 8 hours to make the world’s most perfect steak. Y’all gatekeeping.

    Good color inside but no real sear on the outside. Pepper is burnt.

    Pan was too hot and burnt the pepper. I suggest adding pepper after.

    You can say it’s not seared well enough for you etc. But anyone who’s claiming the steak in OP is well done literally doesn’t have eyes that work. There is nothing well done about that.

    In retrospect, I can see that some of the fat hasn’t rendered and the sear line is very very thin. I mean I think this looks delectable, but you’re not gonna get an A+ around here.

    I know how to cook a steak a million ways. I can cook one reverse and get a perfect color and temp.
    BUT. The flavor is never there like every other steak I make. It tastes weird.
    Why?

    I don’t know why this came up on my feed, but holy shit is OP ever hilarious and insufferable. I had so much fun reading through these comments trying their hardest to give feedback on his poor searing and burnt pepper. And before he asks, I’ve cooked about five steaks in my lifetime, none of them looked as good as this one either. I have no business judging your steak, but I think we all know what kind of person you are from this shit show. 10/10 will be back to this sub again if there is more people like OP posting here.
