Yeah but i still have the top piece in the pan. Usually I put the top and bottom piece on the pan for a while, flip em, put the cheese on one half, let it melt for a bit, flip the other bread and add any spreads and stuff, then make the sandwich and flip it, press it down, boom grilled cheese.

I put both slices (cheese up) on the pan without the lid, then wait for the bread side to get to my preferred toastiness, then drop a bit of water in the edge of the pan and put the lid on until the cheese is all melted.
Then just assemble, cut, and plate.
This is the methodology I learned working in restaurants through high school and college.

I melt the cheese completely with a lid and low heat before I even start toasting.

I put my cheese on a piece of parchment paper and put it in the microwave for about 10 seconds . I then add the cheese to the bottom slice then add the top slice while it’s on the frying pan.
Turns out perfect every time.

I toast one side of the bread on both slices, then flip the bread put the cheeses on and put the other bread slice on top and…. watch it go. Lol but not not the top on it…I get nervous of steam and soggy bread haha

If its not melting your doing it wrong. Are you toasting boath sides of the bread? Start with two buttered bread in a medium hot pan. Toast them. Flup one piece and add cheese. Put the other piece toasted size down on top of your now sandwich. Flip. Once both sides are sufficiently toasted you your cheese in the middle should be melted. Otherwise you used to much cheese and are likely constipated.

I begin by melting the cheese directly in the skillet, using enough to cover the bread. I put one slice of bread on the cheese as it is bubbling (butter-side up), and let it sit for a couple seconds for the cheese adhere to the bread. Lift it up with a spatula, placing the second slice of bread (butter-side down) into the pan. Place the first slice of bread (cheese-side down) onto the first, forming the sandwich. Finish toasting, and enjoy immediately! I like adding some sliced pickles and cracked black pepper to the sandwich, personally.
