Probably red. I’ve had the widest range of experiences with red. A few summers ago, my local grocery store carried these super sweet red onions from Naples, Cipolla Rossa di Tropea. I think about those onions at least once a week.

I use yellow the most. Then reds/shallots. Yellow are multipurpose in cooking, anything that calls for chopped onion is getting a yellow, reds for salsa, pico, guacamole, sliced on sandwiches, shallot I use in Italian and Asian dishes because I feel it’s garlicky.
