Had an uncle that was gonna teach me how to make this once. Never got around to it but I’d imagine this is pretty good. R.I.P.
The setup is great, but your pizza deserves a dough that rises for more than 15min.
I literally just made homemade pizza this afternoon. My dough is very similar except I think you should let it rise longer like you said and then knead the dough a second time and then let rise again.. this is going to build structure/gluten for your dough and it won’t be as paper thin as yours was.. but hey if you like the way your dough turned out perfect that’s all that matters.
