

This salad is so versatile, and I’ve had many different variations of it. You can add whatever you want, depending on what you have on hand: black beans, green beans, Lima beans, edamame beans, black eyed peas, arugula, Persian cucumber, Kalamata olives, cherry tomatoes, etc.

My version of the salad: Red kidney beans, white kidney beans, pinto beans, chickpeas, corn, black olives, artichokes, red onion, sun-dried tomatoes, crumbled feta cheese.
Salad Dressing (adjust to your tastes, and depends on portion): 1-2 tsp extra virgin olive oil, 2 tbsp balsamic vinegar, 1 minced garlic clove, salt and pepper to taste. (Lemon juice also works as a great acid)
