I am going to put the prime rib low and slow in the smoker then sear in cast iron hot oven. I am going to slice the strip into steaks and freeze.

  1. That’s most likely a choice rib roast. Not prime. You did ok, I’d say. Not much marbling and they left a lot of fat on the tip.

    The bones are the best part of all. I cut the roast into steaks and then roast the bones at about 225 for a few hours.

    I just bought 2 from Big Y fir $6.99 a pound. One for Christmas and one for New Years. Any leftovers I make beef stroganoff.

    I just bought two of the NY strip roasts at Publix too. I think I kind of messed up tho… I rubbed it with dry brine last night (Sunday into Monday around midnite) and I had wanted to cook it Thursday but I think that is too long to dry brine it. Any suggestions?
