I hate to hear this. You probably hear this all the time, but for me cooking with beans has made all the difference. Nobody should have to say what you’ve said and my heart is with you and your dad

I am sure you know, but ramen is a fantastic vehicle for all the additions you can afford; eggs, other proteins if you’re able to get them, frozen vegetables you cook just a little on the stovetop.

Had a buddy in college who was the type to workout every day, ride his bike to school, etc. but wasn’t a jocky gym bro either, and he would eat potatoes, onions, and ground beef all thrown together in a skillet for more meals than not. I found it quite boring and certainly don’t want people to feel that this type of meal is all they’re able to do, but you can’t argue with its simplicity and nutritional value. It’s like a pet kibble equivalent for humans.

Remember to check with your local organizations to assist with food needs, food banks, churches, often gurdwara’s will feed people – the one near my house makes a daily meal for those in need, and you don’t even have to be a member or practice the same faith as long as you are respectful. Best of luck to you and your dad.

I feel I should give context.
I’m 27M, high functioning Autistic. I don’t make much with my job, and I fell into a depression when my mom died five years ago. About 3 years ago, my sister took me in when my depression got worse and I became closed off, withdrawn from everything. We took in our dad when he couldn’t afford an apartment anymore about a year and a half ago.
My sister and her boyfriend are in the process of separating. The boyfriend allegedly did something first that caused my sister to cancel their wedding. She stayed for their two kids. But now things have come to a head. I rely on my dad for rides since I haven’t learned how to drive. I have a lot of plans to self improve in 2026, but that will be difficult in the headspace I’m in. We don’t know how long we’ll stay in this house if it’s just us, our dog, the boyfriend and two kids. I don’t know what my sister is going to do. I’m uncertain and sad and bitter right now, at the worst time possible for the year too.
Sorry for the long comment, but that’s what’s going on.
