I got 46 out of this batch, and with what I already have in the freezer, I now have almost two months worth–which will be spaced out over 4-5 months in reality.

This entire process took me about 4 hours from prep to plate. And yes, I had one for dinner after making this because no way was I cooking after this lol.

The ingredients (in order):

  • 3.25 lbs. of potatoes
  • 3 lbs. of thick cut applewood bacon
  • 2 lbs. of maple breakfast sausage
  • 4 bell peppers (2 yellow, 1 red, 1 green)
  • the biggest white onion I've ever seen. Anywhere from 1.5-2 normal sized ones
  • 7 cloves of garlic of varying sizes, microplaned
  • 12 eggs
  • a splash of heavy cream
  • salt and pepper at various steps
  • 46 (48) burrito tortillas
  • chihuahua cheese. Unknown amount, but roughly the amount shown per burrito

    Love breakfast tacos, but don’t usually “meal prep” How do you freeze them so they last long and don’t stick together? Easily thawable? Reheat in oven?
