Broccoli Cheese Soup Recipe
Ingredients
7 cups chicken broth
3 potatoes, peeled and cubed
3 bunches broccoli heads, cut into bite-size pieces (should yield 10 cups)
4 cloves of garlic, minced
1 large onion, diced
1 bunch celery, chopped, use the leafy part too
¼ cup butter
For thickening:
½ cup butter
½ cup flour
6 cups milk (or half and half)
6 cups shredded cheese salt and pepper, to taste
Clean and chop your broccoli, set aside. Peel and dice your potatoes, and add them to a pot. Cover with chicken broth and bring to a boil. Let boil for 5 min. Add your broccoli, continue to boil until the potatoes are just barely soft. Turn your heat off.
In a separate pan, sauté onion and celery in ¼ cup butter. When the onion is translucent add your garlic. Let cook until fragrant, then add to your pot.
In a separate pan (I use the one I just sautéed the onion in) on medium heat, melt ½ cup butter, then whisk in flour. Slowly whisk in milk until smooth. Add cheese and whisk slowly until smooth. Fold in carefully to your big pot, stirring carefully to avoid breaking up the vegetables. Salt and pepper.

Love your outfit Bonnie! ❄️ After cutting off the ends of the onion and cut it in half you can cold rinse the onion so it’s not so strong when cutting it or putting a wet paper towel by where your cutting the onion-it will help to not have it be strong ❄️ The soup looks so good! Regarding roux: Per experience (50+) A fork is a great device to stir/blend. It offers better control and really takes care of the limbs before they are even lumps. Note: a wooden or plastic fork depending on skillet.

My MIL would put the broccoli in water and add a good amount of salt over them to clear out the “bugs” if any. She then rinsed the salt out and prepped them whatever way she wanted that day, steamed or baked. I love broccoli cheese soup.
Not sure but think the broccoli stems have the most nutrients.

With the broccoli stems, you can also take those cut pieces coat them with olive oil, garlic and pepper then roast them in the oven. They will soften up nicely and I find they taste better than the flowerettes.
Another bit of advice (I found out the hard way), I pour my broth in my large clear glass measuring cup to check it before it goes in my pot, because I threw away a whole pot of homemade vegetable beef soup because when I added broth, at the very end, they had a little bit of mold/mildew that was at the bottom of the carton that came out. The broth was not even close to the expiration date. I don't know if it was out in the sun outside on the delivery truck a while before they unloaded it at the store or what. I had to start all over again with my soup. I remember when they had that happen in the Capri Sun drink pouches with the straws. After that, they had made them make them with clear bottoms on the pouches. Don't know if they still do because I don't buy them anymore.
I didn't even know they made garlic in a can! lol I've seen it in a jar, but never in a can.
