Made lemon pepper rosemary parmesan wings using the 0-400 method on my searwood. Holy crap, they were so crispy and delicious. Was a huge hit at our Xmas eve dinner!

    The only thing I don’t love about the start-cold cooking methods is that I don’t get a chance to clean the grill grates right before I cook. But there are ways to handle that, I suppose. Definitely makes good dark meat chicken like wings and thighs.

    Ok, question: i got a pitboss. Would I have the flame plate opened or closed if I did this way? And placed them around it?
