  1. Will be eating this dish tonight as part of the Feast of the Seven Fishes but the pasta will be topped with Pecorino Romano as is our traditional way of serving it.

  2. You overcooked the garlic and you never emulsified the sauce. It's supposed to have a creamy like consistency.
    You should've put the cooked pasta in a sauce or saute pan to get the emulsification.

  4. Try using a large pan to make your sauce, then add noodles to it instead of using the same pot. It’s pretty much the same except you use all of your sauce on the sides and bottom of the pan.

  5. Glad to see a classic getting some exposure. I grew up on this dish, it's simple and delicious.
    I like to prep my sauce in a large pan with sides and if you are confident enough toss the pasta instead of folding. I find it creates a more incorporated sauce and better coats the pasta.

    This is my go to dish when I haven't really thought about what to eat and when I tried this dish for the first time 2 years ago, I've fallen severely into love with it <3 These days, when I can find frozen easy-peel shrimps, a few of them, cut into bite-sized pieces, go into the dish as well, parsley is a must and I've settled for linguine instead of spaghetti, because I prefer the shape – be that as it may: if you've never had aglio e olio you are missing out big time! This dish has no business being as delicious as it is, considering how simple it is.

  8. I cook this in my wok – so I just take the pasta out of the pot right into the wok. Don't throw away pasta water until all done. Amazing what you can do with this right before service.
