Polpette Fritte, or Fried Meatballs

Ingredients:

– 250 grams of chopped beef
– 250 grams of chopped pork
– 250 grams of chopped veal
– 2 large eggs
– 1/2 cup of Italian-seasoned breadcrumbs
– 1 cup of grated Pecorino Romano cheese
– 1/4 cup of chopped fresh parsley
– 1 garlic clove, grated or minced
– 1 teaspoon of salt
– 1 teaspoon of black pepper
– Canola, vegetable oil, or sunflower oil for frying

Instructions:

1. Combine all the ingredients in a bowl.
2. Take a golf ball-sized portion of the meat and roll it into an almond shape.
3. Place the meatballs on a tray and wrap them in plastic wrap. Refrigerate them for 1 hour, or skip this step if you prefer.
4. Generously coat a frying pan with oil.
5. Fry the meatballs on medium-low heat, rotating them frequently until they are crispy on the outside and cooked through on the inside.
6. Drain the meatballs on a paper towel and enjoy!
