Didn’t label it, and forgot what it was. Thawed it out and started trimming the fairly thick fat cap. Google lens says rib loin, but it’s not like any rib loin I’ve ever dealt with. I think it might be a Chuck roll? Any other idea?

    That looks like a chuck eye roast. It’s the part of the cow right before the prime rib (bones 1-5, ribeye is bones 6-12). It’s a bit tougher the further forward you get, but you should beOK to roast it like a prime rib.

    It looks like chuck eye to me, it’s close to the rib section on cow I think so maybe it got mixed up?

    Funny, i work at a butchery and thought it was a prime rib roast as well, definitely looks like one.

  4. Pretty sure that is a chuck roast off the bottom end of ribeye. Trim some fat (and store/freeze to make beef tallow), and pot roast or smoke or slow cook, it will be delicious any way with a little love. Good luck!

    That is the worst piece of certified angus beef prime rib I have ever seen. I would send pics to them and see what they have to say. This is way belongs their quality level – supposedly.

    It’s a primal cut, a “prime rib,” which is basically ribeye. That “top ribbon” of beef running along the outside edge of a ribeye is the spinalis dorsi — most people just call it the ribeye cap (or cap of ribeye).

    A top sirloin / sirloin cap / culotte steak / picanha steak does not have the middle ribbon of fat.

    It is without a doubt top sirloin. Where people are seeing a rib roast or chuck in this I have no clue.
