The dining room vibe is modern and minimalist with just 10 counter seats. It’s just the chef/owner and another helper. We came for lunch and opted for the shorter nigiri only menu as there is a longer menu with more cooked dishes.
His take on sushi is modern. Some pieces are smoked, others seared (Otoro). Other pieces are seasoned aggressively with yuzu and even Japanese yellow mustard. About 1/2 the nigiri is modernized and 1/2 unadorned. Flavors are aggressive including a dessert with a pan a cotta with a deeply burnt caramel flanked by 2 of the sweetest orange segments ever grown.
Overall, a solid omakase. And at roughly $150USD a very reasonable price for this level of cooking.
