    Simple recipe: I used a light seasoned flour dredge on the chicken breasts and a little oil on a flat cast iron griddle to cook the chicken. I also used a cast iron press. Transferred bits to make sauce in a frying pan and finish chicken.

    For sauce: 1 clove garlic, minced; 1 cup chicken broth; ¼ cup fresh lemon juice; 2 tablespoons capers, drained, rinsed and roughly chopped; 3 tablespoons butter; 3 tablespoons white wine, 2 tablespoons minced Italian (flat-leaf) parsley for garnish.

    If you ask why I did it this way, here’s the answer. I was trying out new ways to prepare chicken and decided to change this chicken to a piccata last minute.
