


It's just me this year for Christmas, but I didn't want it to feel like an ordinary day. My local Walmart had hams for 4.00 each, I grabbed one russet potato and one sweet potato, which were 0.70 each and my luxury item, a bag of brussel sprouts for 3.00. I used pantry and fridge items like bacon, eggs, milk, flour and spices to make my mini feast. The majority of the ham was frozen and will be used, I'm anticipating bean soup with the ham bone, ham and cheese omelets, and ham salad sandwiches. What did y'all cook ?

Looks delicious!!! Mine was very similar: ham, baked potato, and roasted green beans because they were on sale and looked so nice and fresh.

Similar! Brussel sprouts as well, sautéed. Made brown rice and lentils in the instant pot, and black pepper salmon filet from Costco. Have an extra meal in the fridge for tomorrow.

Yum! I also bought a ham that was on sale and sliced it up. The hambone is in the freezer ready to go for some soup!
I cooked a pork loin in golden mushroom soup in the crockpot and served that over mashed potatoes for myself. The pork loin made enough for like six more meals as well!

Long version:
I roasted a 24 lb spatchcocked turkey. I’ve had it in my refrigerator’s freezer compartment since before Thanksgiving. I pulled it out to defrost in the fridge compartment a week ago. The shop had the birds for 50¢/lb USD, so I bought 2. Sides were a mix of baby carrots & sweet potatoes, roasted in the pan below the bird along with dirty mashed potatoes. For dressing I had 3 boxes of generic stuffing mix, one meant for chicken & the other 2 cornbread, from the dollar store. I added chopped celery & some crumbled pan-fried thick bacon, then put that in a pan in the oven to crisp. I made pan gravy. A neighbor gave us home-made cranberry sauce. I cooked with half-sticks of butter I got on sale for $3/lb.
I made a plate for one of my flatmates, who provided a gallon of apple cider. My other flatmate ate with relatives, but we will set him up this evening (Friday.) He provided the pies: 1 pecan, one apple. We shared pie with our generous neighbor.
All the leftovers are in jars & bags in the fridge. Some will go in the freezer. I roasted the spine & giblets. Those, along with the bones & the same from my T-day bird will be turned into turkey stock, then turkey soup. I stored half the last turkey (21 lbs) in the fridge & freezer, and we ate that over 10 days. One flatmate still has some, but he might want to be careful with month-old food! I will similarly stash some turkey in the freezer. I need not have turkey every day, as on previous shopping runs I snagged ground beef at $5/lb & pork loin at $2.09/lb. There are roasted pork slices in both the fridge & freezer, next to hamburger patties I made. The pantry is full of rice, pasta & sauce. I have been putting off making a pizza until I restock anchovies. I baked brown Irish-style soda bread on Wednesday.
Winter storm warning for this evening. No need to run to the store. We have plenty.
