What you need:
• Lamb shanks
• Prunes, saffron, tomatoes
• Garlic, onion, tomato paste
• Cumin, coriander, cinnamon, turmeric
• Olive oil
• Plain yogurt + mint + lemon
How to make it:
– Broil lamb until browned
– Sauté onion & garlic → add tomato paste
– Add lamb, saffron water, tomatoes, drippings
– Bake 2.5 hrs at 325°F
– Mix yogurt, lemon, mint for sauce
– Serve over couscous, cauliflower rice, or pilaf
– Drizzle yogurt sauce → dive in
