easy and delicious high protein lunch idea, this dill pickle tuna salad is filling and crave worthy! I love the flavor combo with the tuna with the pickles. Toss in a pita, wrap or have on a salad for an easy lunch this week!
Here’s what you need:
7 oz can tuna, drained
2 tbsp cottage cheese
1 tbsp avocado oil mayo
2 tsp Dijon mustard
1 tsp lemon juice
1/4 cup dill pickles, finely chopped
1 tbsp dill, chopped
1/4 cup red onion, finely chopped
1/2 tsp salt
1/4 tsp fresh black pepper
For serving
Pita
Cucumbers, sliced
Romaine or iceberg lettuce
Transfer the tuna, mayo, Dijon, lemon juice, salt and pepper into a food processor and pulse until combined and almost smooth.
Transfer to a bowl and fold in the pickles, dill and onion.
Scoop into toasted pita with thinly sliced cucumber and lettuce. Top with additional dill pickles and fresh black pepper.
*makes 1 serving or 2 small servings; the tuna salad (without pita etc) comes in at around 300 calories and 46g of protein
