Roasted Tomato Soup (NO OVEN)

Prep time: 5 mins
Cooking time: 15-20 mins
Serves: 3-4 people

Ingredients:
TOMATO | टमाटर 5 MEDIUM SIZED
ONION | प्याज़ 2 SMALL SIZED
GINGER | अदरक 2 INCH
GARLIC | लहसुन 10–12 CLOVES
CORIANDER STEMS | धनिये की डंठल A HANDFUL
KASHMIRI RED CHILLI | कश्मीरी लाल मिर्च 3 NOS.
OIL | तेल 1-2 TSP
SALT | नमक TO TASTE
BLACK PEPPER | काली मिर्च 1/2 TSP (FRESHLY CRUSHED)
WATER | पानी AS REQUIRED (for blending)
HOT WATER | गरम पानी AS REQUIRED (for adjusting consistency)
SUGAR | शक्कर A PINCH
BUTTER | मक्खन 2 TBSP (OPTIONAL)
For garnish
FRESH CREAM | फ्रेश क्रीम
BASIL | बेसिल

Method:
Cut the tomatoes into halves, onions into quarters, and roughly slice the ginger.
Set a pan over high flame and let it get hot. Add a little oil.
Place tomatoes, onions, ginger, garlic, fresh coriander stems, and Kashmiri red chillies into the pan.
Add a pinch of salt and black pepper. Roast on high flame without stirring for 2–3 minutes until nicely charred on one side.
Flip everything, add a splash of hot water, cover, and cook until the tomatoes turn soft.
Switch off the flame and let the mixture cool slightly.
Remove the stalks from the chillies and transfer everything to a mixer jar. Add water and blend until smooth.
Pour the soup into a saucepan, adjust consistency, and bring it to a gentle simmer.
Taste and adjust seasoning, add a pinch of sugar to balance the flavours. Add butter if using.
Simmer briefly, switch off the flame.
Serve hot with toasted bread or garlic toast.
Your quick, comforting, and delicious Tomato Soup is ready.
