A classic of Moroccan cuisine, this tagine combines tender chicken with the tangy flavours of preserved lemons and the sweetness of green olives.

Ingredients
• 1 chicken, cut into pieces
• 2 preserved lemons
• 200g pitted green olives
• 1 sliced ​​onion
• 2 cloves of minced garlic
• 1 bunch of chopped cilantro
• 1 tbsp ground ginger
• 1 tbsp turmeric
• 2 tbsp olive oil
• Salt and pepper

Instructions
1. Prepare the marinade by mixing the ginger, turmeric, garlic, cilantro, olive oil, salt, and pepper.
2. Coat the chicken pieces with the marinade and let them marinate for at least 30 minutes.
3. In a tagine, sauté the onion in a little olive oil until translucent.
4. Add the chicken and the remaining marinade, then cook over low heat for 45 minutes.
5. Add the quartered preserved lemons and green olives, then continue cooking for 15 minutes.
6. Serve hot, garnished with fresh cilantro.
