Firat time making real ramen at home. Obviously I chose the most time consuming broth of them all, because why not?
Boiled pork bones for 12h, sous vide the pork for 20h, and made a bacon tare for flavor.

It’s a good ramen, I wouldn’t add enoki mushroom, it’s an ingredient people purely add because it’s “Asian”, and personally not a big fan of bok choy in ramen unless it’s something like a tantanmen, but I’ve seen it used before so why not.
You could also try making ajitama (soy-based eggs) instead of normal soft-boiled eggs, it’s like 10% more effort but so worth it.
Oh, more broth. You want it to fill up basically 85% of the entire bowl.
