1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger; cook 2–3 min until soft. 2. Add sweet potato, cumin, and chilli flakes. Cook 5 min, stirring. 3. Stir in tomato paste and peanut butter. Gradually add stock, mixing until smooth. 4. Bring to a boil, then simmer 15–20 min until sweet potato is very tender. 5. Add greens and cook until wilted (spinach 2–3 min; others slightly longer). 6. Mash some sweet potato to thicken if desired. Season to taste. 7. Serve over grains and top as you like.
