    Do you have the capacity to do anything not store bought? I would expect there to be a level of skill implied in the name Pit Specialist. You do realize if you did the work it might actually be impressive and people would then actually call you a pit boss.

    While I’m sure these taste good, if you’re doing pork steaks in the future you should try to get much thicker cuts. While those are from the shoulder, they’re far too thin. Best bet is to actually buy a shoulder and you can cut them to whatever thickness you want. You’ll need a saw to get through the blade bone, but it’s not too hard to do.
