Ingredients

  • 1 low-calorie tortilla (60 calories)
  • ½ cup shredded mozzarella cheese (160 calories)
  • 2 tbsp pizza sauce (12.5 calories)
  • 20g fresh arugula (with fresh lemon juice, to taste) (5 calories)
  • 1 tsp balsamic vinegar drizzled (15 calories)
  • Optional: pinch of salt, cracked black pepper, red pepper flakes

Instructions

  1. Preheat broiler Set your oven to broil on high. Place the tortilla directly on a baking sheet or rack.
  2. Pre-broil the tortilla Broil the tortilla for 2 minutes, watching closely, until lightly golden and slightly crisp.
  3. Add sauce & cheese Remove from oven. Spread pizza sauce evenly over the tortilla, leaving a small border. Sprinkle mozzarella evenly on top.
  4. Broil again Return to the broiler for about 2 minutes, until the cheese is melted and just starting to bubble and brown.
  5. Finish fresh Remove from oven and immediately top with arugula. Finish with a light drizzle of balsamic vinegar.
  6. Season Add salt and red pepper flakes to taste.

I always forget that just because I'm cutting doesn't mean I can't enjoy "indulgent" foods. I want to start incorporating some other low calories toppings like thinly sliced tomatoes, bell pepper and maybe some low calorie pepperoni. 😛

    So how big a difference in calories does using flatbread make? Does if make a big difference in taste to you? Cuz I do love pizza.

  2. I did something similar and added a small amount of turkey pepperoni.  Also agree about heating the tortilla first, the low carb ones I get need to be heated, the are very soft,
