I am also very amateur, so take my critique as if I was just one month ahead of you. (I have been making sourdough for over 8 years now)
Bad:
Shaping. For that instagram-cool look, you need to shape the bread better in the final proofing stages. I use bread shaping baskets, which are pretty cheap on Amazon, or I make the dough more stiff so I can get a decent shape.
I do also free-form boules, but that can be challenging. I also have no shame in using bread pans. I mostly make boule in a Dutch Oven, but part of what is fun about bread is variation. (I am terrible at cake, where the recipe IS THE recipe)
Good:
The cut that allows excess steam to escape. I use an exceptionally sharp kitchen knife, but if you want to get into this properly, start hinting about a “scoring knife” as a gift from your SO. It is basically an old school razor blade holder, a cheap gift you will keep forever.
Or you can buy razors for next to nothing, but I like to keep a little romance in the kitchen!
From this amateur: well done. I’d like to see the crumb but that looks like a loaf that has already been well digested
