  3. Look into the rubaud method for when your first mixing the dough by hand, youll have less of those lumps that end up uncooked at the end

  4. a few tips, mix the onion when you are doing step 2, move the dough to final baking pan after last fold, maybe consider using a bigger flatter pan, my oven is not cooking it through after 20 minutes, cover with foil if you are not sure so the top don’t get burnt
