  1. Tried these this week for the first time and they were just incredibly salty. Almost to the point of being inedible. Not quite sure what I did wrong…

    Gave them a second chance, cut the salt almost in half and made sure I was using unsalted butter and they were better, but still quite salty.

    Kenji has several scrambled egg recipes; I use the one that you add small bits of cold butter to eggs as well as corn starch; the most custardy eggs possible
