Pappardelle al cinghiale. This is old time Tuscan dish made with pappardelle pasta and a slow cooked ragu with wild boar. I made it for new years eve. It is simply divine

    It’s interesting that in Europe wild boar is spoken of with reverence, while in America you can find plenty of videos where they’re shot and left to rot.

    I know that they are eaten in the US, but the general reputation is not high.
