For the last 2 years, I've been wanting to smoke beef cheeks and tongue (barbacoa).

Living in an apartment meant relying on a GE indoor smoker, and while it worked… the smoke just wasn't the same.

Last night I finally got the chance to do it right. I know this isn't the traditional way to make barbacoa, but sometimes trying something different is worth it, and when I say the wait was worth it, I mean every second.

    I cooked a lot but never beef cheeks. I’m guessing I can ask any butcher. Is there another term for them as I never see them at the market.

    That looks really good. I’m actually a big fan of beef tongue because I’m used to boiling it for tacos. Although I have been tempted because I did see a recipe for smoking it. The only thing I would recommend is the recipe I saw called for boiling it For maybe an hour or so first and removing the skin before smoking it. My guess is to allow the smoke flavor to really penetrate, but I’m curious if it’s needed. Peeling it would let you get a bark on the actual meat so it might be worth trying.

    This is practically my order at my favorite taco spots, without the smoke.

    On that note, beef tongue prices at my local carniceria is damn near $10/lb. 😢😭
