





Lessons were learned! It was delicious. Too concentrated (my lips feel like they’re coated in lip balm). I definitely don’t need two pieces of chashu and TWO eggs (I was just so excited to have as much of the best parts as I wanted).

Broth and noodles are always the best part for me! I go light on my toppings if I am making the noodles from scratch and will often just get a bowl of broth for seconds!

Pretty awesome first attempt! 😍 I found that too many toppings tends to overwhelm the experience, so I minimize now and enjoy it more. Also, finding that sweet spot of fat content is a critical component. Every time you make it, it will get better and give you more lessons on what you like and don’t like. You’re off to a great start!

Great attempt! I’d suggest NOT using aji-mirin and trying to source mirin instead. The flavor is very different. You’re spot on about having less eggs (or too many toppings in general unless it’s something you’re going for). Ideally, aim for ~350ml broth + tare :: a serving of noodles. It will make the end product prettier and will balance things better. I’d also recommend that you cut your noodles much thinner. Did you use kansui or sodium carbonate? What recipe did you use for the noodles?
