I’ve got all of 5 minutes of effort in these from cutting open the package to wrapped for a rest before slicing. Bbq is simple people. Low slow and leave it alone.

Every brisket or rack of ribs is not always the same. I’ve played the game and thought I had this down but every once in a while, there will the rogue cut that won’t act like I expected it to. You have to be ready to change tactics midstream sometimes. It’s not always one and done

If those are ribs, which I assume they are, then I’d question how good of a job you did because visually they look not cooked properly. You don’t have any pullback on the bone which means the meat didn’t shrink which means you didn’t cook it long enough.
