Fairmont Mumbai has announced the launch of Samaa, a new poolside, open-sky dining venue at the hotel. Designed as an evening-focused restaurant, Samaa draws inspiration from Mediterranean coastal destinations such as St. Tropez and the Amalfi Coast, offering guests a calm, outdoor setting within the city.
Located beside the swimming pool, the venue operates as a reservation-only space and is positioned for intimate dining and small social gatherings. The concept centres on relaxed, open-air experiences, with design elements including soft lighting, water reflections and an emphasis on unhurried dining during sunset and evening hours.
The culinary offering focusses on Mediterranean cuisine, with a menu structured to evolve through the evening. Early offerings include lighter plates such as hummus, fattoush, moutabal, handmade breads and seafood dishes, followed by heartier options later in the night, including Turkish kebabs and grilled specialities. Desserts feature traditional regional preparations with contemporary presentation.
“Samaa is our ode to the Mediterranean, its generosity, its simplicity, and its deep connection to nature,” says Prasad Metrani, Executive Assistant Manager F&B. “Every dish evokes a sense of place, from the brightness of fresh coastal produce to the warmth of traditional Middle Eastern grills. Paired with our one-of-a-kind rooftop, al fresco setting under the open sky, the experience becomes truly transportive. We wanted to create a space where guests can slow down, breathe, and enjoy flavours that are both comforting and elevated. Samaa isn’t just a menu; it’s a state of mind.”
With the introduction of Samaa, Fairmont Mumbai continues to expand its food and beverage portfolio, reinforcing its focus on curated dining concepts that combine international influences with relaxed, experience-led hospitality.
