Hello everyone! I’m Ryusei.
Today, I introduced Iwashi no kabayaki(鰯の蒲焼き). If I have a chance to make a meal, I may select this dish. This dish is so delicious and similar to Unagi(eel). The rich sauce and deep fried sardine are perfect! The tip is deep-frying the sardines in a short time over high heat. I hope you’ll enjoy Iwashi no kabayaki(鰯の蒲焼き).

Recipe
Sardines    6
~Sauce~
Soy sauce   30 grams
Tamari shoyu  10 grams
Mirin      30 grams
Sake      30 grams
Sugar     15 grams
※If you use regular soy sauce, please use 40 grams of soy sauce.

Potato starch(corn starch)

  2. My sardines are frozen, never fresh, and when they defrost, they become to soft and the flesh is not firm like yours, is there a way i can keep the flesh firm, do you know any tips you can share? you did such a beautiful job, thank you for sharing this.

  3. Hi Ryusei. It's Rafael from Rio de Janeiro here. I'm following you since your first video. I know this is a not recent video but I got a question. I heard you said that the rice to this recipe is a japan grain rice in your Kabayaki right? But, it's the same rice to make sushi (sticky)? It's a different preparation or is another tyoe of rice?

  5. Thank you for this lovely video! Here in Calcutta, we also eat sardines (I think it is an Indian version?), but with the head and often in a light mustard gravy. I would love to try this at home next time. Since you explained it so lucidly, it does not seem too difficult, so I think I'll cut the fish myself, too. ^_^ P.S.
