Ingredients:

2 lbs lamb, cut into chunks
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tsp ground cinnamon
1 tsp cumin
1 tsp ginger
1 tsp paprika
1 tsp turmeric
1 tsp black pepper
1 tsp salt (to taste)
1 cup chicken or beef broth
14 oz can diced tomatoes
1 cup dried apricots or prunes
¼ cup sliced almonds
2 tbsp honey
1 tbsp lemon juice
Fresh parsley (for garnish)

Instructions:

Heat olive oil in a heavy pot or tagine over medium heat. Add lamb and sear until browned on all sides. Remove and set aside.

In the same pot, add onions and cook until soft and golden. Stir in garlic and all spices; cook for 1 minute until fragrant.

Return lamb to pot. Add broth and tomatoes. Stir well, cover, and simmer gently for 2 hours, or until lamb is tender.

Stir in dried fruit, honey, and lemon juice. Simmer uncovered for another 15–20 minutes, until sauce thickens slightly.

Sprinkle with toasted almonds and fresh herbs before serving.
