Moroccan Fish and Couscous

    # Ingredients

    **Fish**

    * 6 fish fillets
    * 1 lemon

    **Vegetables & Herbs**

    * 2 bell peppers, sliced
    * 2 carrots, cut into sticks (or baby carrots)
    * 5 green spicy peppers (or to taste), halved & deseeded
    * 1 head garlic (about 15 cloves, or to taste)
    * 1 Tbsp minced garlic
    * 1 can chickpeas (hummus beans), drained
    * Fresh coriander (cilantro), divided

    **Spices & Seasoning**

    * 1 Tbsp sweet Moroccan paprika
    * 1½ Tbsp spicy paprika (½ Tbsp for pan, 1 Tbsp for sauce)
    * ½ tsp turmeric
    * Salt & black pepper, to taste

    **Oil & Liquid**

    * 6 Tbsp olive oil (total)
    * Warm water (½ cup for sauce + extra if needed)

    # Instructions

    1. **Prepare Fish** Squeeze lemon over fish fillets and set aside.
    2. **Build the Base** Heat pan over medium heat. Add **3½ Tbsp oil**, garlic cloves, and green peppers. Cook **3 minutes**, stirring.
    3. **Season** Add sweet paprika, ½ Tbsp spicy paprika, turmeric, salt, and pepper. Cook **3 minutes**.
    4. **Vegetables** Add bell peppers and carrots. Raise to medium-high heat and cook **10 minutes**.
    5. **Simmer** Add chickpeas; cook **5 minutes**. Add water until almost covered and **¾ of the coriander**. Lower heat, cover, and simmer **30 minutes**.
    6. **Coriander Sauce** Blend remaining coriander, **2½ Tbsp oil**, 1 Tbsp sweet paprika, minced garlic, salt, pepper, and **½ cup warm water** until smooth.
    7. **Add Fish** Arrange fish around vegetables, cover, and cook **10 minutes**.
    8. **Finish** Pour sauce over fish. Cover and cook **15 minutes**, then uncover and cook **5 minutes** to reduce liquid.
