This red lentil soup is simple and nourishing comfort food. My recipe is inspired by the Turkish red lentil soup Mercimek Çorbası, which is a classic soup you’ll find across cafes and home kitchens. Made with red lentils, onion, carrot, potato and a touch of garlic, it’s naturally gluten-free and budget-friendly, because it’s made from just a handful of pantry staples. And that warm spiced butter drizzle with Aleppo pepper is the most delicious finishing touch!
This is a super easy soup recipe that I’m 100% confident you’ll come back to again and again for an easy weeknight dinner or healthy meal prep. It’s hearty without being heavy, full of plant-based protein and fiber, and incredibly cozy for cooler days.

I have been to 2 large supermarkets lately looking for GREEN LENTILS for another recipe. The only lentils I found were in a clear plastic bag labeled only "LENTILS".
There must be a difference or you wouldn't specify.
The contents did not look green or red,maybe beige. Store staff knew nothing.
I never peel carrots 🥕 nor potatoes 🥔 😇
