I feel like I over-rendered the guanciale. And that’s a French white. Feedback is welcomed!

    When I’ve eaten this and alla gricia in Rome, the guanciale is always on the well done side of being rendered so looks perfect!

    Looks really good, but I subjectively prefer Spaghettoni or Rigatoni.

    The guanciale is supposed to be crispy so I’d say you did great. The eggs look properly incorporated and not scrambled I’d give this an 8/10. Alittle green on top and a slightly more uniform plating and you’d be 10/10

    The Carbonara looks great. 8.5/10.
    However, my great, great grandmother called and said she wants her plates back. 2/10. 😉

    Im sure it’s fine, but:
    – where’s the sauce?
    – can’t imagine white wine pairs well with it
    – could do with a sprinkle of cheese for garnish.

    Indeed, guanciale could be bit lighter. But the carbonata sauce looks like you nailed it
