Pasta
• 2 eggs (~100 g)
• 150 g 00 flour

Filling
• Celery 20 g, carrot 20 g, onion 20 g (soffritto)
• Chicken 50 g
• Pork 50 g
• Prosciutto 30 g
• 1 egg
• Parmesan 30 g
• Nutmeg
• Salt & pepper

1) Sauté celery, carrot, and onion, add chicken and pork, cook until dry.
2) Blend meat + prosciutto, then add egg, Parmesan, and nutmeg.
3) Knead flour and eggs until smooth, let rest 30 min.
4) Roll out thin, cut into 3–4 cm squares, fill with mixture and shape into cappelletti.
5) Cook in broth for 7–8 min and serve immediately.
